XR research aims to make plant-based food more appealing
Researchers in Finland are using extended reality (XR) to influence how people experience food, in an effort to support more sustainable and health-conscious diets. The Research Council of Finland has funded a project led by Professor Roope Raisamo at Tampere University and Research Professor Nesli Sözer at VTT Technical Research Centre of Finland. The aim is to use XR technology to improve the sensory appeal of vegetarian food.

Researchers present gum tragacanth as a plant-based alternative to gelatin for creating edible films.
